Keep it in the fridge
These are fridge pickles, not canned ones. Nothing about them is shelf-stable, so the jar lives in the fridge from the day it's packed to the last spear.
Wait a week
They're ready about 7 days after the date on the label. The flavor keeps building through that first week, so an early spear is a preview, not the real thing.
The packed date
The date written next to PACKED is the day the jar was made. Count the week from there, and the rest of its life too.
About 6 weeks
A jar keeps for about 6 weeks in the fridge from its packed date. Keep the spears under the brine and use a clean fork, not fingers.
Blue garlic
Chopped garlic can turn blue or green in vinegar. It's a harmless reaction between the garlic and the acid. The pickles are fine, and so is the garlic.
When to let it go
If the brine turns slimy, it smells wrong, or anything fuzzy appears, throw the jar out. A new one is free.
